Oak, hold those thoughts I will dig out my favourite recipes. Doing two chicken dishes this coming week. One is a traditional chicken Chinese curry!!! Weird I know. The other is a chicken rice chorizo spice dish. Tomorrow will flick it to you to try.

Thank you, Mental Fairy! I’ll look forward to them.

In the meantime, friends, I have a new pepper to appreciate: the Fresno chili. It is red, and it is delicious.

I spend a lot of time thinking about peppers. They are life and death to me: nutrition is my main tool to cure sleep apnea

Peppers and the amazing cherry tomatoes, too. So much good umami and sweetness to balance the spice and delightful bitterness of the peppers and onions.

I have lots of sorrows, let me tell you, but the thought of walking to buy peppers in the morning makes me happy to live, really live.

A conservative religious relative once asked me if I worship trees. Because I was a hiker? I don't remember how I responded but I actually think they are more noble and worthier of worship than his version of God is.

I don't know if you can get Hatch chiles where you are Oak. They've been one of my favorites this past year, in salsas and dips and casseroles.

Tonight we have the following

2 Tablespoons of olive oil
600g of chicken thighs or drums
1 red onion
1 bell pepper
300g chorizo sliced
1 teaspoon dried oregano
1 tablespoon cumin seeds
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon of ground cinnamon
1 chilli chopped up
3 cloves of garlic
2 cups of long grain rice
400g tomato passata
1 1/2 litres of chicken stock
1 tablespoon of brown sugar
2 teaspoons of salt
teaspoon pepper
250g black beans in can drained
1/2 cups coriander leaves
lime wedge
hot sauce


Pre heat oven 180c fan bake or 190 regular bake

heat your olive oil in large saucepan, pat the chicken dry and season with salt and pepper fry it off under golden crisp on all sides. Don't need to cook it right through this is just for the flavor. Remove from the pan

Add onion, bell pepper and chorizo to the pan and fry for five minutes. Add all the dried herbs and spices, fresh chilli and garlic and fry briefly.

Add the rice, passata, chicken stock. brown sugar salt and pepper and bring to a simmer. Press the chicken into the rice .

Cover with a lid or foil and bake for 45min - 1 hour. Till the rice is tender and the chicken is cooked. Add the beans to the dish if using and bake for a further 10 minutes.

Once cooked i mix through a handful of coriander leaves, squeeze some lime juice over it and eat! Boys have hot sauce on it also.

Friends, I have an update:

I tried shishito peppers, and in a lentil stew I found them pulpy, and not in a good way. They get one more try fresh and sliced, in tacos.

I’ll have a pepper update this weekend, when I effect Mental Fairy’s recommendation.

(Minus the oil, Mental Fairy, solely due to my hated GERD: I’ve narrowed my GERD to always having oil. I can tempt fate with cumin and fresh garlic, but oil appears to be the one criteria I can’t handle. That said, I look forward to trying your chicken thigh recipe this weekend or next!)

Friends, I have tempted fate, specifically GERD, by increasing my daily consumption of jalapenos and serranos.

I also have an increasingly affectionate place in my heart for the (initially disliked) shishitos.

Happily, through trial and error, I've come to believe my GERD was caused by (1) processed foods and (2) oil. Booooo!

In other words, I can be more daring, so long as the food is unprocessed.

I also put two habaneros into my beloved misir wat, to no real effect.

Well said, Manuel Moe. My palate has changed, and (most) processed food are losing their taste to me. Also, they make me nauseous the rest of the day.

Friends, I have progressed!

Just a few weeks ago jalapeños were too spicy for me, raw.

While I still have a healthy respect for them, I’ve since inched my way to trying serranos and just today a raw habanero.

Also, after initially been left cold by them, I now sorta crave shishitos, but Walmart isn’t carrying them :cry:

Larger picture, no matter how “bad” or “disappointing” life with the fruit and peppers and onions and tomatoes is, is much better than the old life, with GERD.
